Kunafa cupcakes
Ingredients
150g short vermicelli
1/4 cup butter
1/8 tsp orange food colour
1/4 cup sugar
1/4 cup water
50g paneer
2 tbsp fresh cream
1/2 cup of milk
3 tbsp of sugar
1-1/2 tbsp of corn flour
1/4 tsp vanilla essence
1 tbsp chopped pistachio
Method
In a mixture jar add paneer and cream and churn it until become smooth paste.
In a saucepan add milk, sugar and corn flour and mix it well than cook on low flame until it becomes thick. Now add the mixture of paneer and cream, vanilla essence and mix well and cook for another 3-4 minutes.
Break vermicelli in small pieces. Take a non-stick pan and add butter than add vermicelli and roast it for 3-4 minutes on low flame than add food colour and mix it well. Now in greased baking mould add vermicelli and press it now add mixture of paneer and milk leaving the edges. Now cover it with remaining vermicelli and press it lightly.
In preheated oven bake it on 180° for 10-15 minutes.
Meanwhile in a saucepan and sugar and water and cook it until sugar melts.
Take the kunafa out from the oven and drizzle warm sugar syrup on top and garnish with chopped pistachio and serve it warm.
