Walnut Ragi Muffin

Ingredients
1/2 cup ragi flour
1/2 cup oats flour
1 tbsp flaxseed powder
7-8 dates
2 tbsp jaggery
1 cup water
1/4 tsp baking soda
1 tsp baking powder
1/4 tsp vanilla essence
1 tbsp chopped walnuts
For pink sauce:-
1/4 cup milk
2 tbsp fresh cream
1/2 tbsp boiled and grated beetroot
1 tbsp jaggery sugar
Method
Remove the seeds of the dates and chop it finally.
Dissolve jaggery and dates in 1/2 cup water.
Take both flour and flaxseed powder in a bowl and add walnuts, baking powder and baking soda.
Now add the remaining 1/2 cup of water to the baking soda. Then add dates and jaggery water and mix well.
Fill the prepared cake batter in a silicone cup cake mold and microwave for 3 minutes on medium heat.
Pink Sauce: - Mix all the ingredients in a sauce pan and keep stirring till it thickens.
Take a serving plate, put a cupcake, add pink sauce around it and garnish with pistachio slices and walnuts.
