Coconut Lime Sorbet
Ingredients
1 cup coconut milk
3/4 cup coconut water
2-3 tbsp freshly grated coconut
2 tbsp sugar
1 tsp lime zest
1 tbsp fresh lime juice
3-4 freshly chopped lime leaves
Method
In a saucepan, add coconut water sugar and lemon zest and heat until the sugar dissolves. When it's cool down strain.
In a mixi jar, add coconut milk, coconut water and lemon juice and churn.
Then add freshly shredded coconut and mix well.
Then pour it in a container and let it set in the deep freeze for 7-8 hours.
Garnish it with coconut cream, lemon zest, granola, lemon slice lime leaves mint leaves and jaggery sugar and serve chilled.
