Sesame Pudding
Ingredients
1-1/2 cup roasted white sesame seed powder
2 tbsp water chestnut flour (shinghara flour) or corn flour
1/4 cup desiccated coconut
1/2 cup crushed roasted peanuts
1/2 cup coconut milk
1/2 cup brown sugar or regular sugar or jaggery powder
1/2 tsp vanilla essence
3 cup water
1/4 tsp salt
Method
Add water to the sauce pan, add salt and bring to boil.Add sesame powder and mix well. Boil for 5 minutes on low heat and keep stirring.
When it boils, add sugar and vanilla essence and mix well.
Now add coconut milk and let it cook on low flame. In a bowl, take cornflour or shinghara flour, add 4 tablespoons of water, make a slurry and add it to the boiling sesame mixture and mix well.
Now cook it on high flame. Stir constantly. Cook for 8-10 minutes.
Take a serving bowl pour the sesame pudding top with peanuts and desiccated coconut and serve.
