Carrot Corn Pancake

Ingredients
1/2 cup grated carrot
1/4 cup roasted corn kernels
1 tbsp chopped capsicum
1 tbsp chopped green onion
1 green chilli chopped
1 cup roasted oats flour
2+2 tbsp oil
1/4 tsp baking soda
1 tsp dried basil
1 tsp oregano
1/4 tsp turmeric powder
1 tsp red chilli powder
Salt as per taste
Method
In a mixing bowl add all the ingredients then add water as required and mix well. Let the mixture rest for 10 minutes.
Heat a non-stick pan and make pancakes from the prepared mixture, put oil on both sides, cover the lid and let it cook on low heat till it turns slightly golden.
Enjoy the ready pancakes with your favorite sauce.
